We're Not Hungry —
The Psychology of Food Cues.
Hunger has a ceiling. Food cues do not. The industry has known this distinction for fifty years and spent every one of them engineering an environment that keeps you responding to the latter while barely noticing the difference.
At three o'clock in the afternoon, in offices and homes across most of the developed world, a predictable thing happens: people who are not hungry start wanting food. Not because their bodies need energy — lunch was two hours ago and is still being processed perfectly well — but because something happened at three o'clock. Maybe it is a habit that calcified over years of taking a break at that time. Maybe it is the slight dip in alertness that comes from circadian rhythms and gets interpreted as a signal to eat because eating is the fastest available remedy that doesn't require a conversation with your manager. Maybe it is the smell of someone else's snack drifting across the office, or an advertisement that appeared at the bottom of the browser window, or a thought about food that appeared for no traceable reason and has now lodged itself behind the eyes like a gentle but persistent request.
The psychology of food cues — the environmental, emotional, social, and sensory triggers that initiate eating behaviour independently of physiological hunger — is one of the most important and least discussed dimensions of why people eat what they eat and how much of it they eat. It is also the dimension that the food industry has spent the most money understanding, because cue-driven eating is, from a commercial perspective, the most reliable and scalable form of eating there is. Hunger has a ceiling. Cues do not.
How Cues Override Hunger Signals
The brain has two relatively distinct systems that influence eating: the homeostatic system, which monitors energy balance through hormones like leptin and ghrelin and generates hunger signals when fuel is genuinely needed, and the hedonic system, which drives eating for pleasure and reward regardless of energy status. For most of human evolutionary history, these systems operated in reasonable harmony, because food was scarce enough that the hedonic system rarely had much to work with. In a modern environment saturated with food cues — advertising, packaging, ambient food smells, social eating norms, habitual eating locations and times — the hedonic system is continuously stimulated in ways the homeostatic system cannot reliably override.
Brian Wansink's research at Cornell — some of which has since had methodological issues identified — nonetheless established foundational observations that have been replicated in more rigorous subsequent work: the proximity of food, the visibility of food, the size of the container food comes in, the ambient lighting and music in an environment, the social context of eating, and the simple fact of being in a location previously associated with eating all reliably increase intake independent of hunger. People eat more when the bowl is refilled automatically than when they can see how much they've consumed. People eat more in groups than alone. People eat more when the food is visible on the counter than when it's in a cupboard. None of this is hunger. All of it is cue response.

The Environment Is Doing Most of the Work
Perhaps the most practically important insight from food psychology research is that the environment in which eating decisions are made is a stronger determinant of eating behaviour than the conscious intentions of the person making those decisions. Put a bowl of chocolates on your desk and you will eat from it, repeatedly, across the day, in quantities you would not have chosen if asked in advance. Move that bowl to a drawer and consumption drops by sixty percent, even though the chocolates are equally accessible. The chocolate didn't change. The friction between impulse and action changed by approximately four seconds, and those four seconds were enough to break the cue-response chain in a meaningful proportion of instances.
This is the concept of environmental design as dietary intervention: instead of relying on willpower to resist cues in an unchanged environment, restructure the environment so that the cues either don't occur or require more deliberate action to respond to. Keep the fruit on the counter, not the biscuits. Don't buy the crisps in the first place — the friction of not having them at home is more effective than the friction of having them present and trying not to eat them. Serve food on smaller plates, from the hob rather than the table, so that a second helping requires getting up rather than reaching. None of these are dramatic dietary interventions. They are environmental edits that work precisely because they operate below the threshold of the willpower system that food industry environments are specifically designed to overwhelm.
The Commercial Cue Architecture
The food industry's investment in cue architecture is extensive and deliberately concealed. Checkout lanes are stocked with impulse items not because anyone needs a chocolate bar while waiting to pay but because proximity plus brief idle time is a reliable cue combination that produces a predictable percentage of unplanned purchases. Supermarkets pipe bread smells toward the entrance not because they're baking near the entrance but because food smells are among the most powerful appetite cues available and work on people who entered with a specific shopping list and no intention of buying additional food. Restaurant menus are engineered with anchor items and colour psychology not to inform choices but to direct them toward higher-margin options in ways that feel like preference but are largely architecture. The food environment most people navigate daily is not neutral. It is an engineered cue system, and understanding it as such is the beginning of navigating it with any degree of actual agency.
Design Your Environment Before You Try to Resist It
The most reliable dietary improvement available to most people is not a new protocol or a new level of willpower — it is an audit of the food environment they spend the most time in, with the explicit goal of reducing cue frequency and increasing friction between impulse and action. You cannot out-willpower an environment that was professionally designed to defeat your willpower. You can, however, redesign the environment — and that is a fight you are considerably more likely to win.
