The Calorie Count
on That Menu Board
Is Almost Fiction.
Six hundred and twenty-three calories. That number implies measurement to the nearest calorie. No restaurant kitchen on earth hits that precision. The number is doing psychological work that the cooking process cannot support.
There is a number printed on the menu board of almost every major restaurant chain in the developed world — mandated by legislation, displayed with the precision of scientific measurement, and used by millions of people making what they believe to be informed dietary decisions every day. That number is the calorie count. And it is, in ways that the legislation requiring it did not fully account for and that most people eating beneath the board are not aware of, considerably less reliable than its presentation suggests.
Restaurant calorie labelling was introduced with genuinely good intentions: give people accurate nutritional information, allow them to make better choices, reduce the information asymmetry between food businesses and their customers. The problem is that the calorie content of restaurant food is not a fixed, reproducible value the way the calorie content of a standardised packaged product might approximate being. It is the outcome of a preparation process performed by different people, in different quantities, on different days, with different portions of ingredients whose weights themselves vary, producing food that may bear a meaningful resemblance to the labelled figure on a good day and a considerably looser one on a busy Friday evening when the line cook is running behind.
How Far Off the Numbers Actually Get
The research on the accuracy of restaurant calorie labelling has produced findings that would concern anyone relying on those numbers to manage their intake precisely. Studies testing labelled versus actual calorie content of restaurant items have found discrepancies ranging from modest to startling. A Tufts University study testing items from fast food and sit-down restaurant chains found that eighteen percent of items contained at least a hundred more calories than labelled — and some items were off by several hundred calories in either direction. A study in the Journal of the Academy of Nutrition and Dietetics found average discrepancies of around 100 calories between labelled and actual calorie content, with considerable item-to-item and day-to-day variation. These are not malicious misrepresentations — they reflect the fundamental reality that cooking is a variable process, and standardising the calorie output of a variable process requires either mechanistic precision that most restaurant environments cannot maintain or a willingness to accept significant measurement uncertainty that the precision of "623 calories" does not communicate.
The "623 calories" problem is worth dwelling on, because the specificity of the number does a great deal of psychological work that accuracy does not justify. A number like 623 implies measurement to the nearest calorie, implying a precision that is impossible in a restaurant kitchen and misleading to anyone interpreting it. "Approximately 550–700 calories" would be a more honest representation of the actual range for most restaurant items, but it would also be considerably less usable as a decision-making tool, which is presumably why it is not what gets printed on the board.

The Underlying Calorie Measurement Problem
Even if restaurants reproduced dishes with perfect consistency — which they do not — the calorie figures they would be standardising to are themselves derived from a measurement system with known imprecision. The Atwater system, used to calculate the caloric value of foods, assigns fixed calorie values per gram to protein, fat, carbohydrate, and alcohol: four, nine, four, and seven calories per gram respectively. These figures are averages derived from combustion calorimetry — burning food in a sealed chamber and measuring the heat released — that do not fully account for the variation in digestive efficiency across food types, the role of food structure in calorie absorption, or individual variation in gut microbiome composition and digestive efficiency. The calorie on the label was always an approximation. The restaurant menu board is an approximation of an approximation, applied to a variable preparation process, and presented with the visual authority of a laboratory measurement.
None of this means calorie labelling is useless — it does create some accountability and some basis for comparison, and research suggests it modestly influences ordering behaviour in some populations. But the precision implied by specific numbers creates a false sense of dietary control that can work against the people relying on it most carefully, who may be calibrating their daily intake to figures that are off by enough to matter.
How to Use the Numbers Sensibly
The most useful way to interpret restaurant calorie labels is as a rough ordering tool rather than a precise measurement: the 400-calorie item is almost certainly lower in calories than the 900-calorie item, even if neither figure is accurate to within 200 calories of reality. Using labels to identify relative differences between options on a menu — to notice that the grilled option is probably significantly lighter than the fried one, or that the salad with the 800-calorie dressing is not the light option it presents itself as — is legitimate and useful. Using them to construct a precise daily calorie tally with the assumption that the numbers are correct to within fifty calories is an exercise in false precision that the underlying data does not support, and that may produce frustration and confusion when the outcome does not match the arithmetic.
Use Labels for Direction, Not Precision
Restaurant calorie counts are useful for comparing options and making broadly better choices. They are not accurate enough to build a precise daily calorie budget around, and treating them as though they are adds a layer of false certainty to dietary decisions that already carry more uncertainty than most people are comfortable acknowledging. The number on the board is a useful approximation dressed up as a measurement. Treat it accordingly — and save your precision for things that can actually be measured precisely.
